Chocolate Chip Pumpkin Bread

I tried this recipe today! Yummm!! I got it from Karin.

Chocolate Chip Pumpkin Bread

2 cups sugar
2 cups canned pumpkin
1/2 cup canola oil
1/2 cup vanilla pudding (2 Handi Snacks)
4 large egg whites (or 2 large eggs)
2 cups flour
2 tsp cinnamon
1 1/4 tsp salt
1 tsp baking soda
1 cup chocolate chips

Preheat oven to 350. Combine first 5 ingredients (sugar –>eggs) in a large bowl, stirring well with whisk. Combine flour, cinnamon, salt and baking soda in a medium bowl, stir well with whisk. Add flour mixture to pumpkin mixture, stirring until just moist. Stir in chocolate chips. Spoon batter into 2 loaf pans coated with cooking spray. Bake at 350 for 1 hour and 15 minutes, or until toothpick comes out clean. Cool 10 minutes in pan on wire rack, remove from pan and cool completely on wire rack.
