Chicken Tacos

Last night I made chicken tacos. Just decided to throw some things together, and it turned out great!

Chicken Tacos
from my own creative head

2-3 chicken breasts (or equivelent chicken strips)
1/2 – 1 cup salsa
1 packet taco seasoning and amount of water called for in instructions
1 can pinto beans, drained and rinsed

Spray frying pan with cooking spray and cook chicken until done. Cut chicken into small bite sized pieces. Add salsa, taco seasoning, water, and pinto beans; stir. Bring to a boil and simmer for about 10 minutes or until the sauce has thickened.

Serve with whole wheat tortillas, tomato, lettuce, cheese, sour cream, etc.

The filling makes about 4-5 servings, about 4 points each.
