Beef Taco Mac

Last night I tried this recipe. It was very good. I might try it with chicken next time, as I can think of lots of better way to eat steak… like as just a plain old steak 🙂 But it was good and Chad really liked it… another one of those dishes he knew he would like, because he liked all the ingredients separately.

Beef Taco Mac

1 lb Beef Steaks, cubed
1 tbsp vegetable oil (I used olive oil)
1 med onion, chopped
1 pkg taco seasoning mix
2 cans (14 1/2 oz – 16 oz each) diced tomatoes, undrained
1 1/2 cup rotini (spiral) pasta, uncooked (I used whole wheat)
1/4 tsp salt
1/2 cup water
1/2 cup cheddar cheese, shredded

1. Cut beef steaks lengthwise into 1″ wide strips and the crosswise into 1″ pieces.
2. In a dutch oven or large pot, heat oil over medium-high heat until hot. Add beef and onion; cook for 3 minutes, stir occasionally.
3. Stir in salt, taco seasoning, tomatoes, pasta, and water; bring to a boil. Reduce heat to low; cover tightly and simmer for 20 minutes or until pasta is tender. Sprinkle with cheese before serving.

  1. You could use round steak for this. It’s cheaper and a less tender cut, but this sounds like it is cooked long enough that that wouldn’t be a problem.
