Jake's Meatloaf

I got this recipe from my sister-in-law Kim. It is very tasty. Chad has always told me that he’s not a big meatloaf fan, but he thought this was very good. The sauce or glaze makes this excellent! I guess the recipe originally comes from the Chickadee Restaurant which was in Woodbury, which I think is now closed.

Jake’s Meatloaf

Mix together:
2 beaten eggs
2/3 cup milk
2 tsp. salt
½ tsp. pepper
3 slices bread (crusts removed, sliced into small cubes)

Then mix in the following:
2/3 cup shredded carrots
1 ½ cup shredded cheddar cheese
2/3 cup onions
2 pounds ground beef

Form a half log shape (shallow and wide) in a glass 9×13 pan.
Cover and bake at 350 degrees for 1 hour.
Cover with glaze and bake an additional 15 minutes.

1 cup brown sugar
1 cup ketchup
4 tsp. mustard
