Mmmm!! I got this recipe from my sister-in-law Kim. (I think she found it at kare11.com). We had the pancakes for breakfast this morning. Chad says they are the best pancakes he’s ever had. They are a big improvement from the Bisquick recipe I’ve been skating by with for years!
I also thawed and cooked some strawberries in the microwave with a little Splenda to make a kind of strawberry syrup (also added some corn starch to thicken a little) and served them with the strawberry syrup and whipped cream!! What a treat!
Ember’s Original Pancakes
1/8 cup baking powder
1 tablespoon baking soda
2 ¼ cups flour
1 cup sugar
3/4 teaspoon salt
24 ounces buttermilk
3 tablespoons butter
1. In a large bowl, mix eggs and buttermilk. Mix very thoroughly.
2. Slowly add all dry ingredients to egg and buttermilk mixture. Stir constantly with wire whip.
3. Melt butter in microwave and allow to cool to room temperature.
4. Add butter to batter and mix well.
For best results, allow pancake batter to rest for 24 hours in refrigerator. Prior to cooking, stir batter well.
