I had this recipe tucked away in my “to try” pile for quite a while. I started going through them last week to see if I should cut that pile down a bit. But decided this recipe was worth a try. I made it this morning as my parents were here and my aunt Marilyn was going to be over. I think it was a bit dry, but I’m wondering if I should have packed the carrots in more when I measured them. I’ll try that next time, else maybe add a bit of applesauce or more oil… or even blueberries instead of the raisins.
Otherwise the flavor was excellent and it was really easy. Plus makes the perfect amount for a small group of people.
Morning Glory Muffin Squares (from a Bisquick cookbook)
Brown Sugar Streusel
1/2 c Bisquick mix
1/3 c packed brown sugar
2 tbsp firm butter
Muffins
2 c Bisquick
1 1/2 tsp pumpkin pie spice
1/2 c chopped walnuts (I substituted pecans)
1/2 c shredded carrots
1/2 c raisins
2 tbsp sugar
2/3 c milk
2 tbsp vegetable oil
1 egg
1. Heat oven to 375. In a small bowl, mix 1/2 c Bisquick and brown sugar until well blended. Cut in the butter, using a fork; set aside.
2. In a large bowl, stir 2 c Bisquick, pumpkin pie spice, nuts, carrots, raisins, and sugar. Stir in milk, oil, and egg. Pour into ungreased 8″ square pan. Sprinkle with streusel.
3. Bake 30-35 minutes or until toothpick comes out clean. Cool 30 minutes before serving. Serve warm.
