I made corn chowder in the crockpot the other day for dinner. It was Awesome! I will totally make this one again! I found the original recipe here, but tweaked according to some of the reviews and personal taste. Chad and both of his parents gave this one rave reviews. And I do too! The added bonus is that it’s easy to prep the night before and throw in the crockpot before heading to work!
Crockpot Corn Chowder
INGREDIENTS:
5 potatoes, peeled and cubed (I used Yukon Gold)
1 onions, chopped
2 cups diced ham
3 stalks celery, chopped
2 (15.25 ounce) can whole kernel corn, undrained
1 can creamed corn
2 tablespoons butter
salt and pepper to taste
12 oz chicken broth
1 pint half and half
cornstarch (optional)
DIRECTIONS:
1. In a slow cooker, place the potatoes, onions, ham, celery, corn, butter or margarine and salt and pepper to taste. Add chicken broth.
2. Cook on low setting for 8 to 9 hours and then stir in the half and half. Add corn starch to thicken to desired consistency. Cook for 30 more minutes.
