Oatmeal Pancake

I’m back on Weight Watcher’s. Like to be back to my pre-pregnancy weight by Maria’s birthday. (Just over 2 months)

This morning, I made this pancake that I found on the weight watchers readers board. 5 points

Chad thought it was different. He definitely liked the topping though. I liked it.  I mean it’s not Ihop, but still good and much better for you!

Oatmeal Pancake

1/2 cup oatmeal uncooked
1/4 cup skim milk
dash salt & cinnamon
1 egg
Splenda to taste
cooking spray
1/4 cup frozen blueberries
1 tsp Splenda

Instructions

Mix oatmeal and dry ingredients. Add egg & milk and allow to sit for a few minutes for oats to soften.
Spray teflon pan size of a pancake with cooking spray and warm pan. Pour in mixture and allow to cook and lightly brown on one side until it can be turned over with spatula. Turn over and brown on other side.

Heat frozen blueberries and 1 tsp Splenda in microwave (3 minutes @ 50% power)

Remove pancake onto plate and top with warm blueberries.
