"Fried" Ice Cream

It’s the last week of the Whip It Up Challenge. I’m pretty proud of myself for setting aside time for 8 new recipes in the last 8 weeks, even if some of them where simple… like this week’s – “Fried” Ice Cream.  But hey, it fit the theme for desserts!  Two simple ingredients, one of which I didn’t have! So therefore I won’t call mine Cinnamon “Fried” Ice Cream.

Was the recipe easy to follow?

Yes! Especially since it was 2 ingredients. I didn’t have cinnamon toast crunch, so I used Fiber One Caramel Delight.  I know, doesn’t even sound close, but believe me, it is sooo good. Sweet and crunchy, and better for you!

Did the dish taste good?

YES! It was very good. Although, I didn’t really get the point of broiling. I think I had the oven rack positioned wrong.  Or maybe I was just expecting it to be warmer.  But I loved the taste of the cereal with the ice cream. We drizzled it with caramel sauce, and with a bit of whipped cream.

Would you make it again?

Maybe, I’ll probably just make the lazy girl’s version, by pouring the cereal on top of a bowl of ice cream… and maybe I’ll do that later tonight!

“Fried” Ice Cream

3 cups Fiber One Caramel Delight® cereal, crushed
6 scoops (1/2 cup each) vanilla ice cream

1. Place cereal in shallow pan.
2. Quickly roll 1 scoop of ice cream at a time in cereal to coat. Place coated scoops of ice cream in ungreased pan. Freeze about 2 hours or until firm.
3. Set oven control to broil.
4. Broil scoops with tops 6 inches from heat about 30 seconds or until coating is light brown.
