Yes, I took some inspiration from my Deceptively Delicious cookbook, and made some French Toast with Sweet Potatoes! I had the sweet potatoes in the freezer and a not so fresh (but not moldy) loaf of bread. Chad said he couldn’t even tell. But if you look carefully, there was definitely an orange tint to the toast!
I didn’t really follow the directions, because I don’t really figure you have to measure for French Toast, but here is approximately how I made it:
Sweet Potato French Toast
1/2 c pureed sweet potato
12 slices bread
2 c egg subsitute (8 eggs)
1/2 c milk
1/2 tsp cinnamin
1 tsp vanilla
cooking spray
Mix all ingredients, except bread, in bowl. Dip the bread in the egg mixture, and over medium heat, fry the toast (use cooking spray).
