COOL WHIP Whipped Topping.  Yum!  A childhood favorite, not only mine, but now my kids love it too! It was for special occasions when I was a kid, which was usually at my grandparents.  COOL WHIP whipped topping on pie, gelatin salads or desserts.  And being from the Midwest, it always made appearances at potlucks!  But my favorite part was licking the tub in my grandma’s kitchen.

Whipped topping adds a touch of special-ness to our everyday food.  With a busy schedule, I am finally learning to keep things simple.  And as much as I wish I could make everything from scratch, when I can’t I’m always looking for ways to “doctor them up” to add a little “Wow” factor for my kids. COOL WHIP whipped topping is a simple way to meals and snacks a bit extra special.

  • On strawberries, blueberries, pineapple, bananas, and other fresh fruit – YUM!
  • On ice cream sundaes – YUM!
  • Banana splits minus the ice cream?  Yep – Bananas, a little Chocolate Syrup and COOL WHIP whipped topping!   YUM!
  • On pudding – YUM!  (Butterscotch is our favorite flavor)
  • On cake or cupcakes– YUM!  No need to frost a cake, especially in the warmer weather. Whipped Topping is the perfect “frosting” for cake and cupcakes.
  • In your coffee – If you like cream and sugar in your coffee, you will like COOL WHIP whipped topping in it too!
  • On top of waffles, pancakes or French toast with fresh fruit – peaches & blueberries and a sprinkle of cinnamon. Especially easy with frozen waffles.
  • Make a graham cracker sandwich with jam and a little whipped topping between the crackers.

And if you’re having company, there are so many easy desserts that everyone will love like…

  • All things Banana Cream (my husband’s favorite) – cupcakes, pudding
  • Angel Trifle
  • Tres Leches Cake
  • Add it to ice cream shakes with ice cream and fruit to make it especially creamy – don’t forget to add a dollop to the top!

And one of my favorite desserts, especially as we move into warmer weather and berry season – Angel food cake and strawberries.  It’s a hit with everyone!  Made especially easy with a fresh angel food cake from the bakery.   Of course, topped with a dollop of COOL WHIP whipped topping!

Diapers

So a while back, I posted about diapers. And now that Charlie is 6 months old and got some good responses (Thanks!).

Now that Charlie is 6 months old, I think we’ve figured out what we like.

He started off in Pampers Sensitive, because he SCREAMED in regular Pampers. from reviews I’ve read lately too, this seems to be more common since Pampers were redesigned! These were good. Loved the yellow line that turned blue when it was wet!

We then did some Huggies Pure & Natural. no screaming and oh so soft… but they leaked a little more than I would like and were kind of spendy because I couldn’t get them in those gi-normous boxes like the other diapers.

Tried regular Huggies. Good! Liked them! No screaming. no leaks. Then tried Target Up & Up! Seriously impressed. Like them just as much as Huggies with a better price!

But nights, we still use Huggie Night Time diapers. Which I have found the best deals for at amazon.com using Subscribe & Save (30% off right now – and if you subscribe to Parents magazine, check for coupons in the Aug and Sept issue to save an extra 20%!) These deals apply to Pull-Ups too!

Speaking of Pull-Ups I don’t think I’ve mentioned, but Maria is now wearing her big girl undies overnight! It’s been about 3 weeks I think and NO accidents! What a big girl!

He’s Back!!!

So part of the reason I have been missing from action the last couple weeks is due to someone we have been calling Mr. FussyPants (aka Charlie!) Poor guy has been a little… ummm.. how do I put this … ahem… stopped up. And the 2 oz of prune juice each day was NOT getting things moving! And he was a bit uncomfortable for a week or so, but then last weekend he started screaming… after every bottle. Argh… so we went to the doctor. With the help of some glycerin suppositories and an extra dose of prune juice we got things moving! But still fussy… hmmmm…

Then it dawned on me! See last week I thought I was being the responsible parent who was sick of washing bottles by hand, decided to get rid of my BPA bottles that I used with Maria (but didn’t put them in the dishwasher to keep that BPA from leeching into my child’s system!) I upgraded all my BPA Avent bottles with the BPA-free Avent bottles. And even with the slight design change (an added inner ring) it never dawned on me that it may change how my child inhales (because when he is hungry that boy can suck it down!) his formula!

I think it was Monday night when I had to get up with him about 3 times and each time it took me 30 minutes to get him comfortable again, that I realized what the deal was! I hated that I had just spent $40 on new bottles. But I wanted to sleep again (and even daycare commented on how fussy he was!) So Tuesday, I took off to Babies R Us and purchased the some goods my baby (and the landfill!) Playtex Drop-Ins with disposable liners! I have heard wonderful things about these bottles! Not just how easy they are to clean, but also how little gas a baby consumes when drinking from one. And let me tell you, that first night he slept 9 hours straight. Took a bottle and went straight down. NO BURPING!! Woo hoo!!

Daycare said the next day was a dream with him (we gave her a bottle and box of drop-ins too!) So we are on Day 3 and loving having a happy baby again! So yes, We are happy!

Here is the happy guy earlier tonight! Oh, and look he can sit up for a few moments at a time, but we sit close, because he completely just tips over!!

My Laundry Supplies

Feels like I have finally found some good products for laundry that I’m buying and using consistently!

I tried for a long time to go the cheap and the  “green” route, but had a lot of trouble getting things their whitest… I’ve got some theories, but now that I’ve found what works, I’m sticking to it.

Tide Stain Release
Tide Stain Release – I love that I don’t have to pre-treat every little stain when I use this! And a pretty good price at Amazon, especially if you use Subscribe & Save which is a cool service (use it for nighttime diapers!)
RESOLVE MAX Stain Stick
RESOLVE MAX Stain Stick – Love using this on the big stains before throwing them in the laundry basket at the end of the night. You will often find me rubbing down Maria’s shirts with this while she takes a bath!  Again Amazon has a good price. I haven’t found this at Target at all, but have at Cub (Super-Valu)
Clorox Bleach Pen
Clorox Bleach Pen – Not the best price at Amazon, but great for cleaning up white sleeves that got dragged through ketchup and chocolate milk out of a white t-shirt!
Tide Free for HE
Tide Free for HE – Just recently started using this. I love that it doesn’t have dyes or perfumes. Wondering if anyone has tried the cold water Tide?? I just am scared that cold won’t get our clothes as clean. Again probably could find at Target cheaper especially if you have a coupon.

Easy Crockpot Pot Roast

I’ve always loved pot-roast in the crock-pot. In fact I don’t know that I’ve ever had it prepared another way.  But last year I discovered American Inspired Simmer Sauce (Archer Farms) at SuperTarget.

It is delicious!!

American Inspired Simmer Sauce by Archer Farms

Easy Crockpot Pot Roast

2-3# beef roast

2-3 carrots

3-4 medium potatoes

1/2-1 onion, sliced

1 jar Archer Farms American-Inspired Simmer Sauce

Wash and cut the carrots and potatoes into quarters.  Place all ingredients in the crockpot, pouring the sauce over the top.

Cook on low 10-12 hours or high 5-6 hours.

That’s it!

You can totally prepare this the same way without the sauce, but you will want to season the meat with salt/pepper than brown both sides before putting in the crockpot.
