Crispy Cinnamon Garbanzo Beans

I found this recipe quite awhile ago in a Cookie magazine (which has since gone out of circulation).  I made it this weekend to snack on since we were having company on Easter.

Very tasty!  And easy. Less fat and more fiber than  nuts too!

Crispy Cinnamon Garbanzo Beans

Crispy Cinnamon Garbanzo Beans

1 cup dried garbanzo beans
2 tbsp vegetable oil
2 tbsp sugar
1/2 tsp ground cinnamon
1 tsp salt

  1. Soak beans overnight in cool water. Drain and pat them dry with paper towels.
  2. Preheat oven to 350.
  3. In a bowl, toss the beans with the vegetable oil and sugar.
  4. Spread them in a single layer on an ungreased baking sheet. Roast them in the oven until crunch and no longer soft in the centers, about 45 minutes. (Stir them a few times to prevent burning)
  5. Immediately toss the beans in a bowl with the cinnamon and salt. Cool and serve, or store in an airtight container at room temperature for up to a week.

Easy Yogurt Popsicles

I made some frozen yogurt popsicles for Maria this weekend and she loves them! And I love them because they are a great healthy treat for her!

Frozen Yogurt Popsicles

Vanilla Yogurt
Mixed Berries (or fruit of choice)

  1. Put both ingredients in the blender and blend until smooth.
  2. Pour into popsicle molds* (or use paper cups with popsicle sticks)
  3. Put in freezer for several hours until frozen.
  4. If there is extra, pour it in a cup and enjoy! Maria was a big fan of that too!

*My mother was kind enough to give me the Tupperware ones we had growing up and they work really well! (Thanks, Mom!)
