Hoisin Pork Stir-Fry

I just made this recipe for dinner. It was delicious! I got it from Weight Watchers new book, Stir It Up Skillet Cookbook. It’s not for sale yet on Amazon or anywhere, but eBay and Weight Watchers centers. But it’s only $10, and if 1/2 of the recipes are as good as this one, it’ll be a SUPER bargain!

Hoisin Pork Stir-Fry

Prep: 5 minutes
Cook: About 10 minutes
Serves: 4

1 1/2 cups quick-cooking white rice (I used quick brown – not sure why it says white)
3/4 pound boneless pork loin, trimmed and cut into thin strips
2 tbsp dry sherry
1 tbsp reduced-sodium soy sauce
1 tbsp corn starch
1 tsp Asian (dark) sesame oil
2 cups fresh broccoli florets
1 red bell pepper, seeded and chopped
1/4 cup orange juice
1/4 cup hoisin sauce
2 tbsp honey

1. Cook the rice according to package directions omitting the salt if desired.
2. Meanwhile, combine the pork, sherry, soy sauce, and cornstarch in a large bowl, set aside.
3. Heat a large nonstick skillet or wok over high heat until a drop of water sizzles. Add the sesame oil to coat the pan, then add the broccoli and bell pepper. Stir-fry until crisp-tender, about 2 minutes. Add the pork mixture and stir-fry until browned, about 4 minutes. Add the orange juice, hoisin sauce, and honey; cook, stirring frequently, until the pork is cooked through, about 2 minutes. Serve with the rice.

Points: 6 per serving!!!!
