Split Pea Soup

This was dinner tonight! This was my favorite soup growing up.  Probably my brother’s too!  I was the fussiest kid, but I never had a problem eating pea green soup!  Yum!!

Chad and I both love it too, and it’s really simple with the crockpot, and really inexpensive to make! 

Split Pea Soup

1 pound split peas
1 quart water
1 pound meaty ham bones (or just some diced ham)
3 whole peppercorns (or ¼ tsp ground pepper)
1/2 cup celery with leaves — chopped
1 medium onion — chopped
1 carrot — shredded
1 bay leaf — (optional)

Soak split peas in water overnight and drain.  Put all ingredients in the crock pot. Cover and cook on low 10 to 12 hours (high: 5 to 6 hours).

NOTE from my Mom : I usually cut the celery, onion, and carrot into chunks and put them in the blender with part of the water to chop them up pretty small. That way fussy kids don’t find recognizable pieces of onion 🙂
